Indian Specialty Chef

About the role

The Indian Specialty Chef will lead the specialty kitchen at a luxury hotel in Accra, ensuring all dishes meet the high standards set by the Executive Chef and Kempinski procedures. The role involves preparing Indian and specialty menu items while maintaining strict hygiene, safety, and quality controls.

Key responsibilities

• Prepare Indian and specialty dishes according to menu specifications and HACCP standards.
• Train and mentor culinary staff in the specialty section, fostering morale and productivity.
• Maintain kitchen equipment to minimise breakage and ensure safe operation.
• Coordinate with other outlets to deliver high‑quality products aligned with business trends.
• Monitor food waste, spoilage and inventory, alerting senior chefs to adjust purchasing.
• Ensure all culinary activities comply with fire, hygiene, safety, and hotel policies.
• Assist the Executive Chef and Sous Chef in daily kitchen operations and market list management.

Required profile

• Formal gastronomic education (certificate, diploma, BA/BSc) or equivalent apprenticeship.
• HACCP certification.
• Minimum 5 years of kitchen experience.
• At least 2 years of supervisory or management experience.
