Sous Chef - JW Marriott Accra

About the role

JW Marriott is hiring a Sous Chef for its hotel in Accra, Ghana. The role is accountable for the overall success of daily kitchen operations, combining hands-on cooking with leadership of the kitchen staff and management of food-related functions. It works to improve guest and employee satisfaction while maintaining the operating budget, supervising all kitchen areas and guiding staff development.

Key responsibilities

• Manage kitchen shift operations and ensure compliance with Food & Beverage policies, standards and procedures
• Estimate daily production needs weekly and communicate them to kitchen personnel daily
• Assist the Executive Chef and prepare and cook food regularly and for special guests or events
• Create decorative food displays and help determine how food should be presented
• Maintain purchasing, receiving, storage and food handling and sanitation standards
• Supervise cooks and workers, lead shifts and personally prepare food items
• Train employees in safety procedures and take part in performance appraisals
• Handle guest feedback, complaints and problems, and interact with guests to gather feedback
• Use the Labor Management System to schedule staff and track time and attendance
• Operate and maintain kitchen equipment and report malfunctions

Required profile

• High school diploma or GED, or a 2-year accredited degree in Culinary Arts, Hotel and Restaurant Management or a related major
• 4 years of culinary, food and beverage or related experience, or 2 years after the degree
