Product Development Manager / Head Chef - Mugg & Bean Ghana

About the role

Masco Foods is hiring a Product Development Manager / Head Chef for its Mugg & Bean brand in Ghana, reporting to the Business Head. The role adapts the Mugg & Bean menu to the Ghanaian market while protecting the brand's integrity and standards, ensuring recipes, preparation methods and product launches follow approved SOPs. It is a pre-opening/start-up position that transitions into a brand culinary lead.

Key responsibilities

• Adapt and optimise the menu for Ghanaian consumers, identify new products and flavours, and run product trials and recipe testing
• Keep a structured product development pipeline from concept to launch and review local trends, competitors, pricing and customer feedback
• Ensure new products can be executed consistently at restaurant level without adding unnecessary labour, equipment or service-time complexity
• Enforce approved recipes, portion sizes, presentation and preparation methods, and maintain up-to-date product specifications and SOP documentation
• Monitor food and beverage quality across Ghana, coach restaurant teams and partner with Operations to improve consistency
• Train restaurant teams on new products and recipes, develop implementation guidelines and run post-launch reviews
• Work with Operations, Supply Chain, Marketing and Finance to make menu changes commercially viable, profitable and aligned with customer needs

Required profile

• Degree or diploma in Food Science, Culinary Arts, Hospitality Management, Product Development or a related field
• Minimum 5 years' relevant experience, preferably in QSR, casual dining, hospitality or food service
• Demonstrated experience in menu/product development and recipe standardisation
• Experience adapting an international or established food brand to a local market is advantageous
