About the role
The Stewarding Manager oversees daily kitchen utility operations for Marriott International in Accra, ensuring efficient dish room, cleaning, and banquet services while maintaining budgetary controls.
Key responsibilities
- Manage day‑to‑day dish room operations, night cleaning, back‑dock cleaning, and maintenance.
- Coordinate banquet plating and food running with the Banquet Chef and Maitre‑d.
- Control inventories of food, equipment, china, glass, silver and liquor, reporting shortages.
- Ensure compliance with all Food & Beverage policies, standards, and applicable laws.
- Supervise and train utility associates, perform duties as needed, and enforce safety standards.
Required profile
- High school diploma or GED with 4 years relevant experience, OR a 2‑year degree in Hotel/Restaurant Management, Hospitality, Business Administration with 2 years experience.
- Proven ability to manage supplies, equipment, and staff schedules in a high‑volume hospitality environment.
