Sous Chef

About the role

The Sous Chef at Canwin Hotel is a full‑time, on‑site position based in Sakumono. Working closely with the Head Chef, the role focuses on delivering high‑quality Chinese cuisine while ensuring smooth kitchen operations.

Key responsibilities

• Support the Head Chef in daily kitchen operations, including food preparation, cooking, plating and quality control.
• Manage kitchen staff, coordinate shift schedules and maintain a clean, safe, and organized work environment.
• Monitor inventory, assist with menu development and uphold food cost controls.
• Collaborate with front‑of‑house teams to ensure excellent guest dining experiences.
• Train junior cooks, uphold kitchen standards and contribute to a positive, inclusive team culture.

Required profile

• Strong culinary skills with proven experience in Chinese or Asian cuisine.
• Experience supervising kitchen staff and managing workflows during service.
• Knowledge of food safety, hygiene and sanitation standards.
• Menu planning and basic food‑cost management abilities.
• Effective communication, teamwork and organizational skills.
• Prior experience as a Sous Chef or senior line cook in a hotel or restaurant is preferred.
• Culinary diploma, certification or equivalent training is an advantage.
• Flexibility to work evenings, weekends and holidays as required.
